Lysozyme is an enzyme with important anti-bacterial properties. Significant quantities of lysozyme are found in egg whites but it is also produced by the human body, where it is found in secretions such as tears and saliva.

Lysozyme extracted from egg white is widely used in the agri-food, pharmaceuticals and cosmetics industries. The agri-food applications are related with the preservative and excipient properties of the enzyme. It can also be used as an additive in baby foods and as a replacement for dietary sweeteners.

In the pharmaceuticals industry, lysozyme is used for its anti-bacterial, anti-inflammatory properties.

Conalbumin, or ovotransferrin, is a glycoprotein found in egg white. With its anti-viral, anti-bacterial, anti-oxidant and anti-inflammatory properties, it has many applications in industry and the pharmaceuticals sector.

It can be added to bovine milk for newborn babies to fortify its iron content and improve its anti-bacterial properties, and is used as an ingredient in iron supplements.
